2 large red-skinned Apple
1 Red onion

4 Tbsps olive oil
2 Tbsps White vinegar
1 Tbsp Mustard seed

Preparation steps

1.

Rinse and trim green beans and remove strings. Blanch in plenty of boiling salted water for 8-10 minutes. Drain and rinse in cold water. Peel the onion and cut into very narrow strips. Rinse apples, cut in half, remove the cores and cut into slices. Mix oil with salt and pepper to taste, mustard seeds and 2 tablespoons of water to make a vinaigrette.

Mix beans with apples, onion and vinaigrette. Serve salad with fresh bread, if desired.
