For the base
11 ozs Digestive biscuit (crushed to crumbs)
1 pinch ground cinnamon
½ cup unsalted butter (melted)
For the filling
12 Gelatin sheet
2 cups plain Yogurt
1 ½ cups Cottage cheese
1 unwaxed Lime (finely grated zest)
½ cup sugar
2 egg whites
cup cream (48% fat)
cup Calvados
For the apple layer
2 green Apple (e. g. Granny Smith, peeled and chopped)
1 Lime (juice)
2 cups Apple juice
green Food coloring

1 Pot, 1 Skillet, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Sieve, 1 Citrus juicer

Preparation steps

1.
Butter a 30cm|10"" square tin.

For the base: mix together the biscuit crumbs, cinnamon and melted butter. Press firmly into the base of the tin. Chill for 1 hour.

For the filling: add 6 gelatine leaves to a small bowl of cold water. Leave to stand for 5 minutes.

Whisk the egg whites and cream until stiff.

Beat together the yoghurt, cottage cheese, lime zest and sugar until smooth.

Gently warm the Calvados. Squeeze out the water from the gelatine leaves and add the leaves to the Calvados, stirring until dissolved. Stir into the egg white mixture.

Stir in the yoghurt mixture and spoon onto the biscuit base. Smooth it out and chill for at least 2 hours.
8.
Soak the remaining gelatine as before. in cold water.
9.
Mix together the apples and lime juice.
10.
Gently warm the apple juice and stir in the gelatine until dissolved. Stir into the apples with a little green food colouring. Leave until cold but not set.
11.
Pour on top of the filling and chill for 2 hours. Cut into serving pieces.
