Preheat the oven to 220°C (200 fan) | 425°F | gas 7.
Plunge the peppers into boiling water for 2 minutes until they soften, then drain and cube.
Dice the feta into small cubes. Finely chop the plum tomatoes and mix with the peppers and feta.
Cover the pizza bases in a thick layer of tomato puree. Divide the peppers, tomatoes and feta between the two pizza bases. Drizzle a little olive oil over the pizzas and season with salt, pepper and herbs.
Garnish with a few olives and cook in the oven for 12-15 minutes until base is nice and crisp. Slice the pizzas and serve with a fresh salad.
