1 garlic clove
1 organic lemon
2 sprigs parsley
1 sprig mint
500 grams Ground meat (beef or lamb)
1 egg
Cumin (ground)
salt
Red pepper flakes
2 leaves Filo dough (about 40x50 cm or 16x20 inches)
vegetable oil (for frying)

Preparation steps

1.

Peel and mince garlic. Rinse lemon with hot water and pat dry. Zest lemon and squeeze juice. Rinse herbs, shake dry, pluck leaves and mince. Combine garlic, lemon zest, herbs and ground meat in a bowl. Add egg and season with cumin, salt, lemon juice and red pepper flakes. Mix well.

Cut dough into thirds lengthwise, cut strips of dough into triangles and add 1-2 tablespoons of filling to each. Roll up like an eggroll, brush edges with a little water and press down well.

Heat oil in a pan and fry rolls in batches, until golden brown. Remove and drain on paper towels. Serve warm.
