- For the gravlax
- 1 kilogram fresh Salmon (center piece with skin)
- 4 Tbsps rough salt
- 3 Tbsps sugar
- 2 bunches Dill
- 1 tsp coarse white peppers
- soybean oil (for brushing)

Preparation steps

Combine salt, sugar and pepper. Rub salmon fillets on both sides with seasoning mixture and sprinkle both sides with finely chopped dill. In an appropriate dish, lay with skin side down and cover dish with aluminum foil.

Cover with a board and a weight (such as cans). Place in the refrigerator for 1-2 days, turning the salmon fillet often. To serve, gently scrape seasoning, brush salmon fillets with oil, let rest for a few hours wrapped in foil, cut into thin slices and serve.
