Grapefruit Salad with Amaretto Mascarpone
Roast almonds in a dry frying pan. Cool on a plate. Peel grapefruit, remove pith and membranes and collect the juice. Mix juice with mascarpone, sugars and Amaretto.
Crumble meringue. Arrange grapefruit with almonds and mascarpone mixture. Sprinkle with meringue and garnish with lemon balm if desired.
