- 3 cups rolled oats
- 2 cups all-purpose flour
- ½ tsp Baking powder
- ½ tsp salt
- ¼ cup flaxseed
- ¾ cup chopped Cashews (lightly toasted)
- 1 Tbsp Chia seeds
- 1 Tbsp Pumpkin seed
- 2 Tbsps raisins
- ⅓ cup Coconut oil
- ⅓ cup melted unsalted butter
- ¾ cup honey
- 2 large eggs (beaten)

Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Grease 12 muffin tins.

Mix together the oats, flour, baking powder, salt, flax seeds, chia seeds, pumpkin seeds, raisins and cashew nuts in a mixing bowl.
3.
Combine the coconut oil, melted butter and honey until blended. Pour over the dry ingredients. Add the eggs to the mixture and stir well until combine.
4.
Spoon into the tins and bake for 25-30 minutes, until the edges are deep golden. Cool in the tins for a few minutes then remove from the tins and place on a wire rack to cool completely.
