- For the muffins
- 1 ½ cups all-purpose flour
- 2 tsps Baking powder
- 1 tsp ground cinnamon
- ¼ cup sugar
- ¼ cup light brown sugar
- ¼ tsp salt
- ½ cup milk
- ½ cup sunflower oil
- 1 egg
- 1 ½ tsps light corn syrup
- 3 ½ ozs ready-to-eat dried melon (or dried papaya)
- ½ cup chopped almonds
- For the topping
- ¾ cup chopped Nut (almonds, walnuts, etc.)
- 1 ¾ ozs ready-to-eat dried melon (or dried papaya)
- 1 Tbsp dried Cranberry
- ¼ cup light brown sugar
- 2 Tbsps Golden syrup
- ½ cup Chocolate chip

Preparation steps
1.
For the muffins: heat the oven to 190°C (170°fan) 375F gas 5. Place paper cases in a 12 hole muffin tin.
2.
Sift the flour, baking powder and cinnamon into a mixing bowl. Stir in the sugars and salt.
3.
Whisk together the milk, oil, egg and golden syrup and add to the dry ingredients mixing until just combined. Stir in the melon and almonds.
4.
Spoon into the paper cases.
5.
For the topping: mix together all the ingredients and spoon evenly over each cake.
6.
Bake for 20-25 minutes, until golden and risen. Cool in the tins for 10 minutes, then place on a wire rack to cool completely.
