- 1 cup chopped sun-dried tomatoes
- 1 tsp tomato puree
- 1 tsp superfine caster sugar
- ¼ tsp Tabasco sauce (optional)
- 3 Tbsps hot water
- ¼ cup Sour cream
- ¼ cup cream (48% fat)
- 1 tsp Powdered gelatine
- ¼ cup Tomato juice
- ½ cup chopped Pistachio
- To garnish
- 12 sun-dried tomatoes (in oil)
- finely diced Red onions
- chopped Pistachio
- coarse Sea salt
- 6 Vanilla bean
- To serve
- balsamic vinegar

Preparation steps
1.
Place the tomatoes, tomato puree, sugar, Tabasco sauce and 1 tablespoon water in a food processor and blend until smooth. Put into a bowl, then stir in the soured cream.

Whisk the cream until thick and gently fold into the tomato mixture with the pistachios.

Combine the gelatine and the remaining hot water in a small cup, stirring until the gelatine has dissolved. Stir in the tomato juice, then stir into the tomato mixture until blended.

Divide the mousse into individual moulds and chill for at least 5 hours until set.
5.
Un-mould onto serving plates and place 2 sun-dried tomato halves on top of each mousse. Sprinkle with pistachios, coarse sea salt and diced red onion and drizzle with a little oil from the tomatoes.
6.
Serve with a little balsamic vinegar and garnish with vanilla pods, as in the photo.
