Wash and dry the steaks and pound to flatten slightly if necessary.

Toast the bread on both sides under the grill.

Wash and dry the tomatoes.

Peel, halve and slice the onions.

Heat the oil in a non-stick frying pan and sweat the onions until translucent. Add the tomatoes to the onions and fry, stirring carefully, until the onions are golden brown and the tomatoes have split open. Season with salt and pepper.

Season the steaks with salt and pepper. Heat the oil in a grill frying pan and fry the steaks for about 1-2 minutes each side (or for a longer or shorter time depending how well done you like steak). Then add the cognac and flambe.

Cover four slices of toasted bread with rocket, crumble the cheese over and place the steaks on top. Cover the steaks with tomatoes and onion. Put another slice of toast on top and serve immediately.
