- 3 Tbsps butter
- 1 onion (finely chopped)
- 2 medium potatoes (peeled and finely chopped)
- 3 cups chicken stock
- 2 cans white Asparagus (drained)
- 2 Tbsps parsley
- 1 black Truffle
- Chives (to garnish)

Preparation steps
1.
Heat the butter in a large pan and gently cook the onion until soft.

Add the potato and cook for 2 minutes then add the stock and bring to a boil. Simmer until the potatoes are soft then add the asparagus, reserving a few asparagus tips to garnish.
3.
Blend to a smooth puree then pass through a fine sieve into a clean pan. Season with salt and pepper, stir in the parsley and reheat gently.
4.
Serve the soup in warmed bowls with the truffle shaved over and the reserved asparagus and chives to garnish.
