Preheat the oven to 200 ° C.

Rinse, peel and parboil potatoes in salted water. Drain well and let evaporate a little. Cut potatoes in a fan pattern, being careful not to cut all way through. Slice truffles very thinly. Place truffle slices into potato cuts and drizzle with olive oil.
