- For the chick-pea balls
- 2 ½ cups canned chickpeas (drained)
- 1 onion
- 1 clove garlic cloves
- 2 Tbsps chopped parsley
- 1 generous pinch Cumin
- Sea salt
- cayenne pepper
- 4 Tbsps flour
- 2 Tbsps Sesame seeds
- Oil (for frying)
- For the yoghurt dip
- 2 Tbsps Lime juice
- ⅞ cup Yogurt
- 2 Tbsps chopped mint
- To garnish
- 4 slices Tomatoes
- Onion ring
- parsley

Preparation steps

Empty the chickpeas into a sieve and drain well. Peel and finely dice the onion. Peel the garlic. Puree the chickpeas, stir in the onion, pressed garlic and parsley and season with cumin, salt and cayenne pepper. Knead in the flour. Then using moistened hands, shape into balls the size of walnuts, incorporating a few sesame seeds. Heat the oil and deep-fry for about 3 minutes, or until golden brown. Drain on paper towel.

For the dip, mix the yoghurt, lime juice and mint. Put a slice of tomato on each plate and top with a few onion rings. Thread the falafel in twos on wooden skewers and stick into the tomato slices. Garnish with parsley leaves, add a little of the yoghurt dip and serve.
