2 ozs Baby spinach
3 ozs Gorgonzola

Preparation steps

1.

Peel, wash and chop the shallot and celery. Heat oil in a saucepan. Sauté shallot and celery for 4 minutes over medium heat. Deglaze with broth and cream and cook vegetables for 15 minutes at low heat.

Meanwhile, wash spinach and shake dry. Cut cheese into small pieces.

3.

Finely puree sauce and season with salt and freshly grated nutmeg. Add spinach and cheese and simmer for 1 minute. Season gorgonzola spinach sauce to taste and sprinkle with chili flakes.
