3 handfuls Lavender
200 grams honey
2 Tbsps lemon juice
2 Tbsps Port wine
4 Figs
200 grams Goat cheese

Preparation steps

1.

Rinse the lavender and pat dry. Set aside a few for decoration. Mix the honey with the lemon juice, 50 ml (approximately 1/4 cup) of water and the lavender flowers. Bring to a boil and infuse at a low heat for 2-3 minutes. Strain through a sieve.

Stir the port wine. Rinse the figs and cut into slices. Pour the warm lavender-honey sauce over the figs and let cool. Cut the goat cheese into slices and place the cheese on individual plates.

3.

Place the figs on the cheese with the remaining lavender-honey sauce. Garnish with the remaining lavender flowers. 

Serve as desired, with port wine.
