9 slices Black bread
olive oil (for frying)
24 small Goat cheese
300 grams green Beans
3 Tbsps olive oil
3 Tbsps lemon juice
salt
1 Pear
1 tsp honey
1 handful Lettuce (herbs, arugula and yellow dandelions)
4 lg leaves Radicchio

Preparation steps

Cut black bread slices into quarters, and then cut each into triangles. Toast in a pan with each few drops of oil until lightly browned. Remove from pan and let cool. Stack 3 toast triangles with 2 goat cheese pieces alternating goat cheese pieces with toast layers. Repeat with remaining toast and cheese.

Rinse beans trim and cut into small pieces. Sauté briefly in a hot pot in 1 tablespoon oil. Pour in some water and 2 tablespoons of lemon juice. Season with salt, cover and cook for 3-4 minutes. Rinse the pear, cut into quarters, remove core and cut flesh into small cubes. Fold into the beans and season with honey.

Rinse the salad herbs, trim, shake dry and tear into small pieces. Rinse the radicchio and shake dry.

Arrange radicchio pieces on a platter. Fill radicchio cups with the salad herbs and drizzle with the remaining oil and lemon juice. Place the toast stacks alongside the radicchio with pear and bean mixture.

5.

Garnish to taste with pear chips, if desired.
