- 4 Tbsps Brown rice flour
- 2 Tbsps Chickpea flour
- 2 Tbsps Tapioca flour
- 2 Tbsps arrowroot powder
- 2 Tbsps Potato starch
- 2 Tbsps mixed black and white Sesame seeds
- ¼ cup sugar
- ¼ tsp gluten-free Baking powder
- 1 egg white
- 2 Tbsps extra virgin olive oil
- ¼ tsp vanilla extract
- 1 pinch salt
- To coat
- 6 Tbsps mixed black and white Sesame seeds

Preparation steps
1.
Combine all the flours in a mixing bowl, using a whisk. Stir in the white sesame seeds, sugar and baking powder.
2.
Whisk together the egg white, olive oil, vanilla and salt.
3.
Make a well in the centre of the dry ingredients. Pour the wet ingredients into the well and mix until well combined. Cover and chill for 10 minutes.
4.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
5.
Shape the dough into a log about 2cm| 3/4” thick.
6.
Spread the mixed sesame seeds onto a plate.
7.
Roll the log in the sesame seeds and cut into slices.
8.
Place the slices, apart on the baking tray and bake for 10-15 minutes until golden and firm to the touch. Cool on the tray for 10 minutes, then place on a wire rack to cool completely.
