These lovely dinner rolls are a good source of protein and fiber.
If you don't have a gluten intolerane, you can use regular flour in these rolls.

- 1 cup warm Buttermilk
- ¼ cup warm water (more if needed)
- ¼ cup olive oil
- 3 cups gluten-free bread flour (plus extra for dusting)
- 1 tsp salt
- 2 Tbsps sugar
- ½ tsp baking soda
- 2 ¼ tsps active dry yeast
- 4 Tbsps Seed (poppy, sesame, flaxseeds)

Preparation steps
1.
Mix together the buttermilk, water and oil.
2.
Put the dry ingredients into a mixing bowl and stir to combine. Pour in the liquid and mix to a soft dough.
3.
Turn out on a floured surface and knead for a few minutes until smooth. Place in a greased bowl, cover with oiled cling film and leave in a warm place to rise for 15 minutes.

Knead lightly and shape into 12 rolls. Place on a baking tray lined with non-stick baking paper. Cover as before and leave in a warm place to rise for 30-40 minutes.
5.
Heat the oven to 200°C / 400°F.
6.
Brush the rolls with water and sprinkle with seeds. Bake for about 20 minutes until golden and cooked through. Tap the bases gently underneath – they should sound hollow. Place on a wire rack to cool.
