This recipe retains all the classic flavor of banana bread but contains no gluten.

This bread is a great way to get rid of aging brown bananas.

5 tablespoons butter
3 ripe Banana
8 ounces sugar
1 tablespoon Vanilla
1 egg
6 ½ ounces Buckwheat flour
1 teaspoon Baking powder
½ teaspoon salt
3 tablespoons milk
1 ounce Walnut (slivers)
3 tablespoons raw sugar

Preparation steps

Preheat the oven to 180°C / 350°F. Grease a loaf pan with butter.

Coarsely chop the walnuts. Melt the butter in a small saucepan. Mash the bananas until smooth and mix with the melted butter, sugar, vanilla sugar and egg. Sift together the buckwheat flour, baking powder and salt and stir into the banana mixture alternately with the milk. Pour the batter into the prepared loaf pan and bake for 1 hour, until a toothpick inserted comes out clean.

Remove from the oven and sprinkle with the chopped walnuts and raw sugar. Allow to cool slightly, slice and serve.
