1 lemon (juiced)

Preparation steps

1.
Soak the apricots in the water for 24-48 hours or until soft.

Simmer the fruit and water over medium heat for 30 minutes. Add the lemon juice and sugar and stir until the sugar has dissolved.
3.
Boil until the jam as reached setting point, around 25 minutes. Skim off any impurities.
4.
Allow to sit for 10 minutes before pouring into hot, sterilised jam jars. Seal well and label.
