2 cups water
1 lemon (juice)
8 cups sugar

Preparation steps

1.
Put the apricots into a large heavy-based pan with the water and bring to a boil. Reduce the heat and simmer gently for about 20 minutes until soft.
2.
Stir in the lemon juice and sugar until completely dissolved and then bring to a boil.
3.
Boil rapidly for about 15-20 minutes until setting point is reached.
4.
Pour into warm sterilised jars, cover, seal and label.
