Elderflowers are commonly known as a medicinal plant that can help treat many ailments. It helps with sicknesses like the common cold as well as other, more serious conditions like diabetes.
Instead of jsut mint leaves, you can also garnish these berry puddings with some more fresh berries!

- 4 cups green Gooseberry
- 3 Tbsps Elderflower liqueur
- 1 Tbsp water
- 3 Tbsps caster sugar (plus extra for sprinkling)
- 3 leaves gelatin
- ¼ cup milk
- 1 ⅓ cups cream (48% fat)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4.
2.
Put the gooseberries, cordial, water and sugar in a shallow baking dish and cook for 20-30 minutes until tender. Set aside.
3.
Put a quarter of the gooseberries into a blender or food processor (or press through a sieve) and blend to a puree to yield 225ml| 1 cup

Put the remaining gooseberries into serving bowls.
5.
Soak the gelatine leaves in a small bowl of cold water for 5 minutes.
6.
Heat the milk in a pan until hot, but do not boil. Remove from the heat. Squeeze out excess liquid from the gelatine and add the gelatine to the milk, whisking constantly until blended.
7.
Put the gooseberry puree into a bowl and whisk in the gelatine mixture and cream until blended.
8.
Pour into the serving bowls and chill until set.
9.
Heat the grill to high.
10.
Sprinkle the creams with sugar and put under the grill until the sugar bubbles and caramelises. Alternatively caramelise the sugar with a blowtorch. Garnish with mint.
