- For the pastry
- 2 cups all-purpose flour
- ½ cup unsalted butter (softened)
- 1 cup powdered sugar
- 4 egg yolks
- For the filling
- 2 cups halved Strawberries
- 4 egg yolks
- 1 cup breadcrumbs
- 1 cup Almond flour
- ½ cup sugar (scant)
- ¼ cup butter (melted)

Preparation steps
1.
For the pastry: put all the ingredients into a mixing bowl and mix well with your hands to a soft dough. Shape into a ball, wrap in clingfilm and chill for 1 hour.

Heat the oven to 190°C (170° fan) 375°F gas 5. Lightly grease a 23cm|9" flan dish or tin.
3.
Roll out the pastry on a floured surface and line the tin. Prick the pastry all over with a fork, line the pastry case with non-stick baking paper and fill with rice or dried beans. Bake for 10 minutes. Remove the paper and beans and set aside.
4.
For the filling: put half the strawberries in a blender or food processor and process until liquidised.
5.
Pour through a sieve into a bowl and add the remaining strawberries and the rest of the ingredients. Stir well and put into the part-baked pastry case.
6.
Bake for about 20 minutes, until the pastry is golden. Serve warm or cold from the dish.
