- 80 grams butter
- 50 grams candied ginger
- 200 grams sugar
- 120 grams Caramel syrup
- 60 grams Rice flake (From the health food store)
- vanilla extract
- 150 grams Pastry flour
- Baking powder
Preparation steps

Melt the butter and allow to cool slightly. Chop the ginger very finely. Stir the sugar, caramel syrup and ginger into the butter. Stir in the rice flakes and vanilla. Mix the flour with the baking powder and sift into the caramel while stirring.

Put cherry-sized heaps of batter onto a parchment-lined baking try using a teaspoon, leaving plenty of space between them. Bake in a preheated oven at 200°C (approximately 400°F) for 8 minutes. While hot, loosely fold the cookies in half. Bake again until hard.
