Preparation steps

Mix the flour, sugar, salt and orange zest on a work surface. Form a well in the center. Pour the egg and orange juice into the well. Chop the butter into small pieces and distribute around the flour. Quickly knead the ingredients into a smooth dough, wrap in plastic and chill for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

Roll out the dough on a floured work surface until about 1/2 cm thick. Use a cookie cutter to cut out circles (about 4 cm diameter). Place the cookies on a lined baking sheet. Chop the candied ginger. Brush the cookies with the beaten egg yolk and sprinkle with ginger. Bake for about 10 minutes. Remove from the oven, let cool and serve.
