275 grams Pastry flour
2 teaspoons Baking powder
150 grams sugar
1 teaspoon cinnamon
½ teaspoon ground ginger
2 eggs
5 tablespoons honey
60 grams candied ginger
For Decoration
120 grams powdered sugar
1 tablespoon lemon juice
1 tablespoon water
50 grams red Maraschino cherry
50 grams candied ginger

Preparation steps

Chop candied ginger. Combine flour with baking powder, sugar and spices on a clean work surface. Make a well and add eggs and honey in the center. Knead until smooth dough forms, add more flour if needed. Add ginger and roll out dough about  ½ cm (approximately 0.2 inch) thick. Place onto a baking tray.

Bake in preheated oven at 170°C (approximately 325°F) for about 20-25 minutes. Combine powdered sugar, water and lemon juice until smooth. Brush still warm sheet of ginger pastry with  lemon mixture. Cut into diamond-shaped squares (3cm x 4cm) (approximately 1 1/4 x 1/5 inch). Garnish with cherries or candied ginger. Serve.
