- For the dough
- 50 grams melted butter
- 2 Tbsps Molasses
- 100 grams light cane sugar
- 1 egg yolk
- 180 grams Pastry flour
- 1 tsp Baking powder
- 1 tsp ground ginger
- ½ tsp cinnamon (ground)
- ¼ tsp allspice (ground)
- 1 pinch salt
- 50 grams candied ginger (very finely chopped)
- To sprinkle
- 2 Tbsps Raw cane sugar

Preparation steps
1.
Beat together the butter, molasses, sugar and egg yolks. Mix in the flour, baking powder and spices until smooth. Use a teaspoon to place small heaps of the dough on a parchment paper-lined baking sheet, leaving distance between each cookie.

Sprinkle with cane sugar. Gently press the cookies to slightly flatten them. Bake on the center rack of a preheated oven at 180°C (approximately 350°F) for about 12 minutes. Cool on a wire rack.
