Preparation steps

1.

Peel, rinse and finely chop the carrot. Blanch in boiling salt water for 3-4 minutes, rinse in cold water and drain well. Peel the cucumber, halve and remove the seeds. Finely dice the cucumber.

Season the tomato juice with salt, cayenne pepper, Tabasco sauce and sugar. Add the carrot and cucumber and chill.

Pour the juice into glasses. Rinse the cherry tomatoes and skewer on toothpicks. Serve garnished with cherry tomatoes and parsley.
