- ¼ cup sunflower oil
- 4 ½ cups Wild boar fillet (cut into 2” cubes)
- ¼ cup all-purpose flour (sifted)
- 1 onion (chopped)
- 4 cups mixed exotic Mushrooms (brushed cleaned)
- 1 cup lager
- 1 ⅔ cups Beef stock
- salt

- For the mashed potato
- 6 cups floury potatoes (peeled and cut into chunks)
- ⅓ cup unsalted butter
- salt

Suggested variation; replace the lager with the same volume of red wine for a red wine stew.
Preparation steps
1.
Coat the boar with the flour and season generously then shake off the excess.
2.
Heat the oil in large casserole dish over a moderate heat until hot. Seal the boar in batches until golden brown all over before moving to a slow cooker.

Add the remaining oil to a the casserole dish and reduce the heat a little. Add the mushrooms and saute for a few minutes, stirring occasionally.

Deglaze the dish with the beer before adding the stock and stirring well. Pour into the slow cooker and cover with a lid. Cook on a medium setting for 6 hours.

Adjust the seasoning to taste and turn off the slow cooker, keeping the lid in place.

Cook the potato in a large saucepan of salted, boiling water for 15-20 minutes until tender.
7.
Drain and let the potato steam off for 5 minutes before mashing with the butter and seasoning until smooth.
8.
Spoon the mash onto serving plates. Spoon the wild boar stew on top and garnish with the thyme.
