- 1 prepared Rabbit (approx. 1.5 kg)
- 4 Tbsps olive oil
- 2 Celery (finely chopped)
- 2 carrots (peeled and finely chopped)
- 2 Parsnips (peeled and chopped)
- 1 cup Pearl onion (peeled)
- 2 onions (peeled and finely chopped)
- 2 cloves garlic cloves (peeled and finely chopped)
- 2 Tbsps tomato puree
- ⅓ cup Bacon (streaky, American)
- 2 cups dry white wine
- 2 allspice
- 5 peppercorns
- 5 Coriander
- 2 fresh bay leaves
- 3 sprigs thyme
- salt
- freshly ground peppers

Preparation

1 Pot, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Whisk
Preparation steps
1.
Divide the rabbit into portions, seal on all sides in 2 tbsp of hot oil in a casserole dish. Remove to one side.
2.
Sweat the vegetables for 5 minutes in the remaining olive oil. Season with salt and pepper, stir in the tomato puree and bacon and add the white wine.
3.
Grind the allspice, pepper, coriander, bay leaves and thyme in a mortar and pestle, add to the vegetables and bring the liquid to the boil.
4.
Place the rabbit portions back into the casserole and simmer over a low heat for around 1 hour until tender.
5.
Season with salt and pepper and serve.
