2 unwaxed Limes (finely sliced)
cup raspberry Brandy
4 cups dry white wine (chilled)
3 cups dry Sparkling wine (chilled)
1 bunch mint (chopped)
Lemongrass (for garnish)

Preparation steps

1.
Put the fruit in a glass jug and pour over the raspberry brandy and around 500 ml of white wine. Cover and chill for around 2 hours.
2.
Shortly before serving, add the remaining wine and the sparkling wine and stir in the mint. Serve in tall glasses garnished with lemongrass.
