250 grams butter (softened)
250 grams sugar
4 eggs
1 pinch salt
1 teaspoon cinnamon
2 teaspoons grated Lemon peel
3 tablespoons lemon juice
2 centiliters Rum
300 grams Pastry flour
½ packet Baking powder
150 grams candied Fruit (as desired)
100 grams powdered sugar
1 tablespoon lemon juice

Preparation steps

Separate the eggs and beat the butter until fluffy. Gradually stir in the sugar and egg yolks. Add the salt, cinnamon, lemon peel, lemon juice and the rum. Set aside 2 tablespoons of flour, mix the rest of the flour with baking powder and gradually stir into the dough. Beat the egg whites until very stiff and gently fold into the batter.

Chop the candied fruit into small pieces as needed (set aside a few for decoration) and mix with the remaining flour, then fold into the batter. Line a loaf pan with parchment paper and pour in the batter. Bake in an oven preheated to 180°C (approximately 350°F) on the second shelf from the bottom 80 minutes. Turn out onto a cooling rack and allow to cool. Turn the cake again.

Mix the powdered sugar with the lemon juice and brush on the surface of the cake. Garnish with remaining candied fruit. Allow the glaze to dry thoroughly before cutting.
