For the vegan cake baking soda is used as a raising agent. However, this also has positive effects on our body. In a study it was shown that baking soda can lower an increased LDL cholesterol level. The raising agent is also said to be able to alleviate stomach problems and heartburn after fatty meals.
If you like, you can cover the vegan fruit cake with a dark chocolate icing (vegan) and spread the cake with chopped nuts. For a vanilla note in the fruit cake you can use a packet of vanilla custard instead of the starch.

Ingredients
- For the dough
- 150 grams butter
- 150 grams sugar
- 3 eggs
- ½ Orange (organic)
- 1 pinch salt
- 300 grams Pastry flour
- 2 tsps Baking powder
- 2 Tbsps Rum
- 100 grams dried Apricot
- 70 grams ground almonds
- 50 grams raisins
- 80 grams Walnut (chopped)
- 4 Tbsps milk
- For the mold
- butter (for greasing)
- breadcrumbs for sprinkling (optional)
- powdered sugar (for dusting)
Preparation steps
Preheat the oven to 180°C (approximately 350°F) (conventional oven). Grease a loaf pan and sprinkle with breadcrumbs or line with parchment paper.
For the dough: Beat the butter until creamy. Alternately add the sugar and eggs. Add the grated orange zest, salt and rum. Mix the flour with the baking powder.
Cut the apricots into small cubes and mix with the almonds, raisins and walnuts. Alternately stir the flour mixture and fruit mixture into the batter. Add the milk and stir until combined. Transfer to the prepared loaf pan and bake until golden brown, around 45-60 minutes. Let the cake cool slightly then invert onto a wire rack to cool completely. Dust with powdered sugar just before serving.
