Preparation steps

Peel and quarter the apples and pear. Remove the core and finely dice. Finely grate the zest from the lemon, then squeeze the juice. Bring the fruit, lemon zest, lemon juice, grape juice, Marsala wine, and white wine to a boil. Reduce the heat to low, and simmer the mixture for 40 minutes stirring occasionally.

Finely grate the zest of half of an orange. Mix the zest with the mustard powder and the juice from half of an orange. Add the orange juice mixture and the cinnamon to the fruit mixture, then puree completely. Season to taste with salt, remove from the heat, and cool completely. This fruit sauce goes well with cheeses, grilled fish, or meats.
