250 grams shrimp

3 Tbsps Yogurt (0.1% fat)
1 Tbsp Curry
1 Tbsp finely grated onions

Preparation steps

1.

Combine rice with double amount of water and season with 1 pinch of salt. Bring to a boil and cook on low heat until rice is al dente and all liquid is absorbed. Add shrimp and half of scallions (cut into thin rings) to rice. Grate orange peel, separate orange segments. Mix with rice. 

2.

Rinse and dry lettuce, arrange letuce leaves in serving bowls.Combine mayonnaise, yogurt, curry and onion to make a dressing. Place rice mixture onto lettuce leaves, drizzle with sauce. Season with salt and pepper and garnish with reserved scallions. Serve.
