- 2 ⅓ cups Couscous
- ⅓ cup Dried Tomatoes (in oil, chopped)
- ⅓ cup Currants
- ⅓ cup raisins
- 3 ½ cups vegetable stock
- 1 red Bell pepper (diced)
- 1 green Bell pepper (diced)
- 1 onion (diced)
- ½ bunch mint (chopped)
- 2 Tbsps white wine vinegar
- 2 Tbsps lemon juice
- 3 Tbsps olive oil
- salt
- freshly ground peppers

Preparation steps
1.
Bring the vegetable stock to a boil and pour over the couscous, raisins and currants. Leave to stand for about 10 minutes, then fluff with a fork.
2.
Whisk together the vinegar, lemon juice and oil to make a dressing. Season with salt and pepper and add to the vegetables.
3.
Mix the couscous with the vegetables, add the mint and serve.
