2 Tbsps olive oil
2 red Bell pepper (seeds removed, diced)
7 ozs canned Pineapple (drained)
7 ozs canned Sweet corn (drained)
7 ozs cooked ham (chopped)
6 scallions (chopped)
2 Tbsps white wine vinegar
1 Tbsp mild Mustard
½ cup extra virgin olive oil
salt

1 Pot, 1 Skillet, 1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Sieve, 1 Citrus juicer

Preparation steps

Rinse the rice and put into a large pan with the water and salt Bring to a boil, cover and simmer gently for about 20 minutes until the rice is tender and the water has been absorbed. Leave to stand for 5 minutes, then fluff up with a fork.

Heat the oil in a frying pan and add the peppers. Cook for 10 minutes or until tender, stirring from time to time. Remove from the pan and drain on absorbent kitchen paper.

Mix the rice with the peppers, pineapple, sweetcorn, ham and spring onions.
4.
Whisk together the vinegar and mustard until smooth. Gradually whisk in the oil and season to taste with salt and pepper.
5.
Stir into the rice mixture, mixing well. Spoon into jars and keep chilled until ready to serve.
