- For the vanilla layer
- 4 eggs (separated)
- ½ cup powdered coconut sugar
- 1 tsp vanilla extract
- 1 ⅓ cups cream (48% fat)
- For the orange layer
- ¾ cup cream cheese
- ⅔ cup plain Yogurt
- 11 ozs canned Mandarin orange (in natural juice)
- 2 egg whites
- To decorate
- ¾ cup chopped Pistachio

Preparation steps
1.
Line a 25cm x 9.5cm|10" x 4" deep loaf tin with cling film.
2.
For the vanilla layer: whisk the egg whites until stiff. Add the sugar, a tablespoon at a time, whisking well until blended.
3.
Whisk in the egg yolks, one at a time with the vanilla.
4.
Whisk the cream until thick and gently fold into the mixture until combined.
5.
Spoon half the mixture into the tin, spreading it evenly. Cover and freeze for 2-3 hours until firm. Cover and chill the remaining mixture.
6.
For the orange layer: beat together the cream cheese until soft, then gradually beat in the yoghurt.
7.
Puree the oranges in a food processor. Beat into the yoghurt mixture.
8.
Spoon into a freezerproof container, cover and freeze for 1-2 hours until slushy.
9.
Whisk the egg whites until stiff and gradually fold in the slushy mandarin mixture.
10.
Spoon the orange mixture over the frozen vanilla layer and freeze for 1-2 hours until firm.
11.
Spoon the remaining vanilla mixture on top. Cover and chill for 3-4 hours until firm.
12.
Remove from the tin and sprinkle pistachios over the top.
