400 grams waxy potatoes
1 onion
2 Red Bell pepper
100 grams Feta
4 Tbsps olive oil
6 eggs
4 Tbsps Whipped cream

1 Tbsp freshly chopped parsley
2 Tbsps grated Cheese (such as Manchego)

Preparation steps

Preheat oven to 180°C convection (approximately 350°).

Peel, rinse and slice potatoes. Peel onion and cut into strips. Rinse and halve peppers, remove seeds and ribs, and cut into strips. Crumble feta. In a pan, heat oil. Add potatoes. Cover and cook, turning occasionally, about 10 minutes. Add onions and peppers and fry 3-4 minutes more. Whisk eggs with cream, salt and pepper to taste, and parsley. Stir in feta and manchego cheese and pour mixture over vegetables. Cook a few minutes more on the stovetop, then transfer to the oven and bake about 15 minutes.

Cut frittata into pieces and serve.
