Heat oil and butter in a pan. Skewer sausages on popsicle sticks, so shape remains during cooking. Add sausages to the pan and fry on each side until browned.
Pluck rosemary from the stems. Pluck thyme and parsley leaves from the stems and chop finely. Add herbs to the pan two minutes before the end of the cooking time and cook briefly. To serve, remove popsicle sticks and place sausages on a plate.
