400 grams Tagliatelle
4 Tbsps butter

For the sauce
400 grams shrimp (ready to cook)
1 onion
3 garlic cloves
3 Tbsps olive oil
2 sprigs Tarragon
2 Tbsps Tomato paste
100 milliliters Vegetable broth
1 can Diced tomatoes
50 grams sundried Tomatoes (in oil)
1 tsp sugar
1 tsp chopped Italian Fresh herbs

Preparation steps

Cook the pasta according to package directions until al dente.

Chop half the shrimp. Peel the garlic and thinly slice. Peel, halve and finely chop the onion. Heat 2 tablespoons of oil in a pan and sauté half the garlic until translucent. Add the chopped shrimp and the tomato paste, stir in the vegetable broth and simmer for about 5 minutes. Add the canned tomatoes with their juice, the sundried toamtoes, sugar and the chopped herbs and keep warm.

Heat the butter in a large skillet. Drain the pasta well and saute until crisp, season with salt. At the same time, heat the remaining oil in another pan and saute the shrimp with the garlic and the tarragon. Turn the crisp noodles into nests and arrange on warmed plates, add the sauce, divide the shrimp among the nests and serve hot.
