Baked Pasta Nests

- 500 grams Spaghetti
- salt
- 80 milliliters olive oil
- 2 handfuls Oyster mushrooms
- 2 Tomatoes
- 250 grams Mozzarella
- freshly ground peppers
- 1 handful Basil
- 1 handful parsley
- 3 sprigs oregano
- 1 garlic clove
- ½ lemon (juice)
Preparation steps
Cook pasta in salted boiling water until al dente. Rinse with cold water, drain well and mix with 1 tablespoon oil. Pile into 4 portions to form small `pizzas' and place on an oiled baking sheet.
Brush mushrooms and pluck into small pieces. Rinse tomatoes, remove stems and cut into slices. Drain mozzarella and cut into slices. Distribute mushrooms with tomato slices on the noodle pizzas, season with salt and pepper and lay cheese on top. Bake in the oven about 20 minutes until golden brown.
Rinse the herbs, shake dry, pluck the leaves, put aside some oregano leaves for garnish and finely puree the remainder with peeled clove of garlic, lemon juice and remaining oil. Season with salt and pepper.
Remove pasta pizzas from oven and drizzle with oil. Serve sprinkled with remaining oregano.
