- For the ice cream:
- 1 Orange
- 1 lemon
- 3 egg yolks
- 50 grams sugar
- 200 grams Cottage cheese
- 100 milliliters Whipped cream
- For coating:
- 50 grams Pastry flour
- 1 egg
- 100 grams Coconut flakes
- vegetable oil (for frying)

Preparation steps
1.
For the apricot compote: Pit the apricots and cut in half. Combine with the sugar and water. Simmer for 4-5 minutes. Let cool.

For the ice cream: Squeeze the orange and lemon. Mix the juice with the egg yolks and sugar in a metal bowl. Beat over a pan of hot water until frothy, then stir until cold. Add the cottage cheese into the mixture. Whip the cream until stiff and fold into the mixture. Pour into baking tray and freeze.
3.
Form the ice into small balls and roll in the flour, then the beaten egg and lastly in the coconut flakes. Repeat this process quickly and return to the freezer.
4.
Float in the hot oil and fry briefly.
