- 250 grams Arugula
- 250 grams Cherry tomatoes
- 80 milliliters olive oil
- 30 milliliters balsamic vinegar
- salt
- freshly ground peppers
- sugar
- For cheese
- 300 grams Feta
- 100 grams Pumpkin seed
- 2 eggs
- Pastry flour
- 1 garlic clove
- 2 Tbsps sunflower oil
Preparation steps

Slice feta cheese into 4 equal pieces. Chop or coarsely grind pumpkin seeds. Whisk eggs. Season the pieces of cheese with salt and pepper, then turn slightly in flour, then in eggs. Finally, dip in the pumpkin seeds and press the seeds into cheese gently.

Peel and halve garlic. Heat oil in a pan and sauté halved garlic until golden then remove. Add the cheese to the hot oil and sauté until golden brown on both sides, about 2 minutes each side on medium heat.

Rinse, spin dry arugula. Rinse and halve tomatoes. Mix together oil, vinegar, sugar, salt and pepper to make a vinaigrette.

Arrange arugula and tomatoes in bowls and drizzle with vinaigrette. Arrange the feta cheese on top and serve immediately.
