500 grams sheep cheese
1 egg
3 Tbsps pecorino romano (freshly grated)
1 bunch Wild garlic
60 grams breadcrumbs
vegetable oil (for frying)
2 yellow Bell pepper
2 red Bell pepper
1 lemon (juice)
1 generous pinch oregano (dried)
olive oil
salt
freshly ground peppers

Preparation steps

Rinse peppers, cut into quarters, remove seeds and ribs and place skin side up under a broiler preheated to 240°C (approximately 465°F) for about 10 minutes. Remove, cover with a damp cloth and leave to cool. Then remove skin and flatten. Marinate with lemon juice, olive oil, oregano, salt and pepper. Let rest for about 2 hours.

Combine goat cheese, egg and pecorino. Thinly slice garlic, reserving 1 tablespoon for garnish, and add to cheese mixture. Season with salt and pepper. Mass should be easy to shape, add some bread crumbs if needed. Shape about 8 balls and roll them in breadcrumbs. Heat oil in a pan and fry cheese balls until golden brown, about 2-3 minutes.

Plate marinated peppers and top with cheese balls. Serve garnished with remaining garlic.
