- 1 clove garlic cloves
- 1 shallot
- 2 cups cherry Tomatoes
- 1 stalk Celery (plus extra for garnish)
- 2 Tbsps olive oil
- 2 Tbsps white wine vinegar
- ⅔ cup vegetable stock
- salt (to taste)
- freshly ground peppers (to taste)
- sugar (to taste)

Preparation steps
1.
Peel the garlic and shallot and finely chop; set aside.

Blanch the tomatoes in a pan of boiling water; plunge into ice cold water to stop the cooking process. Peel and roughly chop the tomatoes. Wash and trim the celery and finely chop.

In a skillet, heat the oil over medium heat. Sweat the garlic and shallots until translucent. Add the tomatoes and celery. Combine the vinegar and vegetable broth and add it to the skillet. Simmer over medium heat for 4 to 5 minutes.

Season to taste with salt, pepper and sugar, Allow salsa to chill in the refrigerator. Serve.
