1 kilogram yellow onion
50 grams butter
250 milliliters dry white wine
Nutmeg
1 tsp freshly chopped thyme
1 pinch ground Caraway
4 slices Baguette

Preparation steps

Peel onions and cut into fine strips. In a saucepan, heat butter and saute onions until translucent. Add broth, wine, nutmeg, thyme and cumin and mix. Let the soup simmer for 25-30 minutes over low heat. Preheat the oven broiler.

Toast bread and rub with peeled garlic clove. Press garlic and stir into the soup. Season the soup with salt and pepper and pour in oven safe soup bowls. Place toast on the soup, cover with cheese and place soup under the oven broiler, watching carefully, for a few minutes until cheese is melted. Serve immediately.
