700 grams onions
2 Tbsps sunflower oil
1 tsp sugar
salt
freshly ground peppers
800 milliliters Beef broth
200 milliliters dry white wine
2 garlic cloves
1 Tbsp lemon juice
12 thin slices Baguette
100 grams freshly grated Gruyere
scallions (for garnish)

Preparation steps

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions for 10-15 minutes stirring slowly until soft. Season onions with sugar, salt and pepper and let simmer about 10 minutes, stirring occasionally, until golden brown.

Then add broth and wine, bring to a boil, reduce heat and simmer for another 15 minutes. Peel garlic and press with a garlic press into the saucepan and season with lemon juice, salt and pepper.

Preheat the oven to 240°C (approximately 475°F) or preheat the oven broiler.

Divide onion soup between 4 ovenproof soup bowls. Place 3 slices of baguette over each soup bowl and sprinkle cheese on top. Bake under oven broiler for 2-3 minutes until the cheese starts to melt. Serve garnished with chives.
