2 cups Green beans (topped and tailed)
2 Tbsps olive oil
1 red pepper (seeded and finely sliced)
½ bunch scallions (finely chopped)
lemons (juiced)
salt

Preparation steps

1.
Parboil the beans for 4 minutes in salted water until just tender, then plunge into iced water to stop the cooking and retain the colour.
2.
Heat the oil in a pan until quite hot, then add the peppers and cook until tender and lightly golden in patches.
3.
Add the beans and spring onions, toss to warm through, then add the lemon juice and season. Serve immediately.
