- 28 ozs Green beans
- 8 slices Parma ham
- 8 thick Chives
- For the sauce
- 1 cup butter
- 2 egg yolks
- 4 Tbsps dry white wine
- salt
- White pepper
- 2 Tbsps lemon juice

Preparation steps
1.
Blanch the beans in salted boilingwater for 6-8 minutes. Drain well.
2.
For the sauce: clarify the butter by melting it and skimming off the foam.
3.
Put the egg yolks and wine into a heatproof bowl and beat over a pan of simmering (not boiling) water until foamy.
4.
Add the butter, in drops at first, then in a thin stream, beating constantly to a creamy, homogenous sauce. The egg yolks must not curdle - don't let it boil! Season with salt and pepper and add lemon juice to taste.
5.
Drain the beans. Divide into 8 bundles, carefully wrap a slice of Parma ham around each bundle and tie with a chive.
6.
Serve on warmed plates, sprinkle with a little sauce and serve the rest of the sauce separately.
