Ingredients

For dough
1 cube fresh Yeast (42 grams)
500 grams Pastry flour
salt
3 Tbsps olive oil
Pastry flour (for the work surface)
For topping
300 grams Cheese (Gorgonzola, Mozzarella, Parmesan, Pecorino)
2 sprigs Sage
3 garlic cloves
olive oil (for drizzling)

Preparation steps

For the dough, dissolve the yeast in 250 ml (approximately 1 cup) lukewarm water. Mix the flour with 1 teaspoon salt in a bowl, make a well in the flour and pour in the yeast mixture and the oil. Mix into a smooth dough. Add more flour or water if necessary. Knead the dough on a floured work surface for about 10 minutes. Cover and let rise in a warm place for about 1 hour.

Preheat the oven to 220°C (approximately 425°F).

For the topping, grate the cheese or mash with a fork. Rinse the sage, shake dry, pluck the leaves and slice into thin strips.

Knead the dough again well, divide into 12 equal portions and roll each portion of dough into a flat round. Place on a parchment-lined baking sheet. Peel and mince the garlic. Drizzle the dough with oil and spread the garlic on it. Mix the cheeses and sage and sprinkle on the dough. Bake for 15 minutes.
